About the Master-Bilt DC-12D

Overview

The Master-Bilt DC-12D is a conventional ice cream storage and dipping cabinet for commercial service. Its top accommodates 18 three-gallon cans for dipping, with space inside the cabinet to store 15 additional three-gallon cans. This split between service and reserve stock lets staff keep flavours ready at the cabinet while holding additional product below.

The cabinet uses a self-contained refrigeration system with a cold-wall evaporator. The stated holding range is -10°F to 10°F. Its seamless stainless steel top, hinged stainless steel lids and white galvanized steel cabinet suit regular use in an ice cream shop, dessert counter or other foodservice operation serving scooped frozen treats.

Key Features

  • Service and reserve capacity: Dip from 18 three-gallon cans and store 15 more three-gallon cans.
  • Hinged lids: Stainless steel lids have handles and gaskets. The gaskets help limit cold air loss when the cabinet is closed.
  • Cold-wall refrigeration: A galvanized steel inner liner houses the cold-wall evaporator.
  • Self-contained system: The factory-tested refrigeration system is built into the cabinet.
  • Condensation control: Anti-condensate heaters sit beneath the stainless steel top cap.
  • Insulated cabinet: The cabinet has 2 1/4-inch foamed-in-place, zero-ODP urethane insulation.
  • Drain for washdown: A floor drain with a garden hose fitting helps remove cleaning solution from the cabinet.
  • Levelling: Standard levelling legs help correct for uneven flooring.

Installation & Requirements

Allow at least 4 inches between the cabinet back and a wall. The manufacturer specifies this clearance for air circulation behind the cabinet and to help prevent condensation on the exterior. The case is specified for operation in an air-conditioned area at 75°F ambient temperature and 55% relative humidity. The manual notes that higher temperature or humidity can affect performance and reduce capacity; sweating may occur until store conditions improve.

Position the cabinet away from direct sunlight, radiant heat and direct airflow, which the manual identifies as conditions that can adversely affect performance. Keep ventilation openings clear. Install the cabinet on a suitable, grounded electrical connection. The specification calls for 115V service and recommends a 10-amp supply; the unit is supplied with a 9-foot cord and NEMA 5-15P plug. The manual warns not to use an extension cord.

The manual calls for installation by competent service personnel. Work on refrigeration and electrical components must be performed by a refrigeration mechanic and/or licensed electrician, with wiring completed to applicable local, regional and national requirements. The manufacturer also advises inspecting the shipment on arrival and noting visible damage or shortages on the bill of lading before signing.

Operation

Allow the cabinet to run for at least 6 hours after startup before loading product. Do not put soft or partially thawed product into the case. The temperature control is near the condensing unit and adjusts from setting 1, the warmest, to setting 9, the coldest. Turn the control to the required setting using the punch mark on the dial as the reference.

During service and restocking, load the cabinet quickly and expose only small quantities of product to store temperatures at a time. Rotate stock so older product does not accumulate; the manual specifically recommends first-in, first-out rotation for ice cream. Keep the cabinet clean and sanitary in accordance with applicable local sanitation requirements. If moisture or liquid is found around or beneath the cabinet, investigate promptly: the manual identifies it as a potential slip hazard and calls for qualified personnel to determine the source.

Cleaning & Maintenance

For exterior cleaning, wipe the cabinet with mild detergent and warm water, rinse, then dry with a soft cloth. Do not use abrasive cleaners, caustic cleaners or scouring pads. Do not remove frost with a knife, pick or other sharp object.

To clean the interior, move the product to a suitable location and unplug the cabinet. Remove the drain cap and plug, attach a garden hose to the drain fitting and route the hose to a floor drain or suitable receptacle while the cabinet defrosts. Wash the interior with mild detergent and warm water, then rinse and dry it with a soft cloth. Remove the hose and replace the hose-fitting cap and drain plug. Plug the cabinet back in and allow it to reach operating temperature before restocking.

The cabinet has an anti-sweat heater beneath the vinyl collar around the openings in the top. The manual says the heater can be replaced by removing the plastic collar without dismantling the top. Refrigeration or electrical service should be left to qualified personnel. Before service, the manual calls for disconnecting electrical supplies before removing sealed covers; it also warns that the fan may start automatically, so keep hands and materials away from the fan blade.

Applications

The DC-12D is suited to commercial ice cream service where staff need a broad selection of flavours at the dipping position as well as reserve cans close at hand. Its capacity can support ice cream parlours, dessert counters and foodservice venues that scoop ice cream during service. Check the cabinet dimensions, required rear clearance and electrical connection against the intended location before specifying it.
