DD-26

Overview

The Master-Bilt DD-26 is a commercial ice cream dipping and display cabinet for shops, cafés, restaurants and other foodservice counters serving scooped ice cream. Its compact cabinet presents four ice cream flavours for customer viewing and operator service. Each can is specified for a 3-gallon container measuring 9 1/2 inches in diameter.

The DD-26 combines a tempered plate-glass viewing window with a stainless steel top, attached superstructure and serving deck. Installation & Requirements

The DD-26 is specified for 115V electrical service and is supplied with a 9-foot, three-wire cord and molded NEMA 5-15P plug. Its drain uses a standard garden-hose connection. The specification states that no minimum clearance is required at the cabinet sides; the front, back and top must remain open for customer and operator access. Rear air intake and discharge are part of the cabinet design.

Master-Bilt notes that the cabinet is designed for optimum performance in an air-conditioned area at 75°F ambient temperature and 55% relative humidity. The DD-26 uses R-134a refrigerant. The source specifications do not provide a gas connection or additional installation procedure.

Operation

The cabinet is intended to keep ice cream in its dipping compartment within the specified 5° to -5°F temperature range while presenting the cans behind a tempered-glass viewing window. The operator accesses the cans through hinged transparent acrylic lids with full-length handles. Separate on/off switches control the compressor and interior light, allowing each to be switched independently.

Four 3-gallon cans fit in the display compartment. The cabinet’s stainless steel serving deck provides the specified serving surface, and the fluorescent fixture lights the display. The specification lists heavy-duty epoxy-coated wire that can support racks; it does not provide rack loading limits or detailed operating instructions.

Cleaning & Maintenance

A drain with a standard garden-hose connector is provided to make cabinet cleaning easier. The cabinet has top and side lid wiper gaskets, and its sides do not require minimum clearance. The DD-26 is specifically excluded from the specification’s low-maintenance bare-tube condenser-coil feature, which applies to other models in the series.
