About the Master-Bilt DD-88LCG

Overview

The Master-Bilt DD-88LCG is a low curved-glass ice cream dipping and display cabinet for commercial service. It accommodates 16 three-gallon cans in the display and 12 additional three-gallon cans in storage. The display window gives customers a view of the flavours while the stainless steel serving deck provides a surface for service items. Hinged transparent acrylic lids cover the dipping compartments.

The cabinet maintains a stated temperature range of 5°F to -5°F (-15°C to -21°C) using R290 refrigerant and a cold-wall evaporator. Its rear air intake and rear and side discharge eliminate a front grille, leaving the cabinet front available for graphics. The manufacturer specifies operation in an air-conditioned environment at 75°F ambient temperature and 55% relative humidity.

Installation & Requirements

Master-Bilt specifies an air-conditioned operating area at or below 75°F and 55% relative humidity. The operating manual warns that higher temperature or humidity can affect performance and capacity. Keep the cabinet away from direct sunlight, radiant heat sources and direct airflow.

The specification sheet states that no minimum side clearance is required. The front, back and top must remain open for operator and customer access. The cabinet takes in air at the rear and discharges it at the rear and sides. The rear air arrangement removes the need for a front grille, but the front still needs to be accessible for service and customer use.

The unit is supplied with a 10-foot cord and NEMA 5-15P plug. The manual requires a grounded electrical service, prohibits using an extension cord and says electrical work must follow applicable local, regional or national standards. It recommends a separate 20-amp fused circuit for each cabinet to avoid overloading from other appliances; the product specification separately lists a 15-amp maximum fuse size. Have a qualified electrician confirm the correct branch-circuit and overcurrent protection for the site and unit. The drain outlet has a garden hose connection.

The manual says installation and service of refrigeration and electrical components must be performed by a refrigeration mechanic and/or licensed electrician. Because this cabinet uses flammable R290 refrigerant, it cautions against damaging the refrigerant tubing. It states that service should be performed by factory-authorized personnel and replacement components should be like-for-like.

Operation

Allow the cabinet to run for at least six hours after startup before loading product. Do not load soft or partially thawed product. When stocking, work quickly and expose only small quantities to store temperature for short periods. The manual recommends rotating stock using a first-in, first-out practice, especially for ice cream.

The product specification identifies a standard electronic controller. The operating manual describes temperature adjustment on a control numbered from 1 (warmest) to 9 (coldest), with the control near the condensing unit at the front of the cabinet. Follow the controls fitted to the unit and its operating documentation. The stated holding range is 5°F to -5°F.

For service reference, the manual gives operating pressures for DD-66 and DD-88 R290 cabinets in a 75°F room with the cold cabinet cycling on control: suction pressure of 2 to 4 psig and head pressure of 130 to 160 psig. These are service diagnostics, not routine operator adjustments.

Cleaning & Maintenance

The manual calls for emptying, warming and wiping down the cabinet every 30 to 60 days, depending on frost accumulation. It specifies a solution of 1 teaspoon of baking soda in 1 quart of water to help eliminate odours. It warns against strong soaps or detergents because they can leave odours that contaminate product.

Do not remove frost with a knife, pick or other sharp object. Do not use abrasive or caustic cleaners or scouring pads. If the cabinet cannot be switched off, the manual permits placing plastic sheeting on the cabinet floor and removing frost from the walls with a plastic scraper; do not use a metal scraper, which can damage the interior paint. The floor drain exits at the lower rear and has a garden hose fitting.

Wash the acrylic lids with warm soapy water or a non-abrasive detergent to avoid scratching. Optional can holders can be taken apart for cleaning: remove the plastic can clamp by unscrewing its knob, loosen the wing nut to remove the shaft, and unscrew the shaft from the shelf. Wash the holder and clamp with non-abrasive detergent; wash the shaft and shelf with a non-metallic brush. Optional frost shields can be lifted out of their keyhole slots. The manual says to remove frost when it reaches approximately 1 inch, rinse the shields under running water, dry them and reinstall them.

The DD-88LCG condenser filter screen is removable without tools. The specification sheet recommends cleaning the screen every three months, depending on the operating environment. The manual also describes the DD-88 condenser filter as removable and reusable and says it should be cleaned periodically for optimum performance. Turn off power to the lighting circuit before replacing a burned-out LED.

The manual treats moisture or liquid around or under the cabinet as a potential slip-and-fall hazard. Investigate promptly to determine whether the source is cabinet malfunction or a leaking drainpipe, and have qualified personnel assess the equipment if needed. Its sensor-probe information identifies the DD-88 bulbwell as a straight 3/8-inch copper tube located 3 inches below the doghouse. For probe service, it says the probe must be fully inserted to the end of the bulbwell without damage; the DD-88 probe is colour-coded blue.

Troubleshooting

The manual lists high ambient humidity as a possible cause of cabinet sweating. It also lists low voltage, a defective overload protector or high head pressure as possible causes when the compressor starts and runs but cycles on overload. When the compressor hums but does not start and cycles on overload, the listed possibilities are low voltage, a defective relay, a defective overload or high head pressure.

For a warm cabinet with normal pressures, the manual lists an undercharged refrigerant system or a thermostat set too warm as possible causes. These checks involve refrigeration components. The manual restricts refrigeration and electrical service to qualified personnel and cautions that the unit contains flammable refrigerant; do not attempt refrigerant-system repairs as an operator.
