About the Rational ICOMBI
Overview
The RATIONAL iCombi is a commercial combi-steamer for cooking with steam, convection, or both in sequence or together. The supplied model information covers the iCombi Pro and iCombi Classic. The model data sheets supplied here give detailed specifications for an iCombi Pro 20-2/1 E/G and an iCombi Classic 10-1/1 E/G; these figures apply to those configurations, not automatically to every iCombi.
Both referenced models offer steam from 30°C to 130°C, convection from 30°C to 300°C, and combined steam and convection from 30°C to 300°C. The Pro data sheet describes an intelligent, connectable cooking system with cooking paths and automated assistance. The Classic data sheet describes manual cooking with ClimaPlus climate management and humidity adjustment.
Key Features
iCombi Pro
- iCookingSuite: Select a cooking path from seven operating modes and four cooking methods, then specify the desired result. Sensors identify food size, quantity, and condition, and the system adjusts cooking parameters as the process progresses.
- iDensityControl: Combines sensors, heating, steam generation, active dehumidification, and controlled air turbulence to manage the cooking-chamber climate.
- iProductionManager: Organises multiple cooking processes and mixed loads, with time- or energy-based planning options.
- Programming and networking: The Pro supports up to 1,200 cooking programmes with up to 12 steps each. Programmes can be transferred by USB or through ConnectedCooking. Ethernet, WLAN, and USB interfaces are listed.
- Core-temperature monitoring: The supplied Pro sheet specifies a core-temperature probe with six measuring points and automatic error correction for false readings.
- Operator interface: A 10.1-inch colour touchscreen, central selection dial, configurable languages, search function, context-sensitive help, and user-profile controls are listed.
- iCareSystem: The Pro’s cleaning and descaling system detects dirt and calcification and recommends from nine cleaning programmes. The source describes an intermediate cleaning programme that takes 12 minutes; programmes can run unattended, including overnight.
iCombi Classic
- ClimaPlus: Measures and regulates cooking-chamber humidity, with humidity adjustment in 10% increments and values shown on the digital display.
- Air circulation: The Classic 10-1/1 data sheet lists two reversing high-performance fan wheels and five manually programmable fan speeds.
- Manual cooking support: The listed functions include a steam generator, core-temperature measurement, Delta-T cooking, cool-down, and digital displays for temperature, humidity, and time.
- Grease management: The Classic sheet specifies an integrated, maintenance-free grease-separation system with no additional grease filter.

Installation & Requirements
Confirm the exact model, fuel, voltage, and phase before planning a connection: the Pro 20-2/1 and Classic 10-1/1 have different listed requirements, and each sheet gives separate electric and gas configurations. Both referenced model sheets list a 3/4-inch water inlet, 1.0–6.0 bar flow pressure, and DN 50 water outlet. The Pro 20-2/1 sheet lists an RJ45 network interface and IEEE 802.11 a/g/n WLAN; it states that ConnectedCooking requires a network access point or WLAN integration and recommends a data rate of at least 100 MB/s for optimal performance.
The Classic data sheet identifies water inlet, water outlet, electrical connection, equipotential bonding, ventilation pipe, and Ethernet interface connection points. Its gas drawing also identifies a gas connection and separate exhaust pipes for steam and hot air. Both supplied data sheets require applicable national and regional standards for commercial cooking appliances and local ventilation-system regulations to be followed. The Pro manual recommends professional installation by certified technicians and states that the unit can be installed flush with walls.
Operation
Use steam, convection, or a combination of the two for the cooking process. On the iCombi Pro, the operator selects an operating mode or cooking method and desired result; the system then uses food sensors and cooking progress to adjust parameters such as temperature, cooking-chamber climate, and air speed. The Pro also offers iProductionManager to plan several cooking processes or mixed loads, and programmes can be created or transferred by USB or ConnectedCooking.
The Classic supports manual cooking with digital target and actual displays for temperature, humidity, and time. Its ClimaPlus function measures and regulates chamber humidity, with settings in 10% increments. The supplied Classic sheet also lists five manually programmable fan speeds, Delta-T cooking, and a core-temperature sensor. On the Pro, the core-temperature probe has six measuring points; the manual describes automatic correction when readings are false.
Cleaning & Maintenance
The iCombi Pro has an automatic cleaning and care system for the cooking cabinet and steam generator. Its nine programmes include automatic cleaning and descaling, and cleaning can run unattended. The manual describes a 12-minute ultrafast intermediate-cleaning programme, phosphate- and phosphorus-free Active Green cleaner and care tabs, and an automatic safety routine that leaves the cooking chamber detergent-free if a cleaning cycle is cancelled by a power failure. It also lists a three-pane door with swivelling glass panes for cleaning, a seamless stainless-steel cooking chamber with rounded corners, and IPX5 protection against water jets from all directions.
The Classic data sheet lists RATIONAL Active Green cleaner tabs and care tabs as accessories. Its integrated grease-separation system is described as maintenance-free. The Pro manual recommends regular maintenance in accordance with the manufacturer’s recommendations by RATIONAL service partners; it does not specify a maintenance interval in the supplied text.
Troubleshooting
The Pro includes a service-diagnosis system with service-message indicators and a self-test function to assess unit functions. The manual also describes remote diagnosis through ConnectedCooking by certified RATIONAL service partners. If a power failure lasts less than 15 minutes, the system automatically recommences and completes the cooking sequence. The core-temperature probe is specified to correct false readings automatically. The supplied material does not provide user repair procedures or a fault-code list.
Applications
The model sheets describe the iCombi for most cooking processes used in commercial kitchens. Listed uses include roasting, cooking, baking, grilling, poultry, meat, fish, egg dishes and desserts, side dishes and vegetables, baked goods, and finishing. The product information also identifies accessories for cooking processes such as grilling, braising, baking, and banquet finishing. Select capacity and configuration according to the required GN accessories, batch load, and available gas or electrical connection.
