About the Frymaster 3FQG30U
Overview
The Frymaster 3FQG30U is a three-vat FilterQuick oil-conserving gas fryer battery. Each open frypot holds 30 lb. (15 litres) of oil and has a 13" x 14" x 3-3/4" frying area. The open-pot design uses 40% less oil to cook as much food as frypots almost twice its size, while using 10% less energy. Frymaster specifies 70,000 BTU/hr. input per full frypot.
The battery includes an FQ4000 easyTouch controller, automatic top-off and closed-cabinet automatic filtration. Its frypots are constructed independently, allowing a frypot to be repaired or replaced while the rest of the battery remains in operation. The fryer is available for natural and propane gas; the gas type must match the unit’s factory configuration.
Key Features
- Three open frypots: Each vat has a 30 lb. (15 litre) oil capacity and a 13" x 14" x 3-3/4" frying area.
- Oil-conserving design: Frymaster states that the open frypot requires 40% less oil to cook as much food as frypots almost twice its size, with 10% less energy use and less waste.
- Automatic top-off: The system replenishes oil from a Jug-In-Box (JIB) located inside the fryer cabinet.
- FQ4000 easyTouch controls: The touchscreen controller provides cooking and filtering functions, a recipe library, product display options and day-part menu organization. Recipes can be loaded through the fryer’s USB port.
- Automatic filtration: Closed-cabinet filtration is operated from the front of the fryer. The system includes a rear oil flush, and only one frypot filters at a time; other frypots wait in queue.
- Oil and energy management: COOL Mode reduces temperature when the fryer is not in use. Flexible filter reminders can be set by global or individual product count.
- Burner and temperature components: The fryer has durable infrared burners, a center-mounted RTD and a 1°-action thermostat.
- Optional equipment: Available options listed for the FQG30U family include basket lifts, an Oil Quality Sensor (OQS), KitchenConnect communication capability and an oil disposal caddy. Confirm availability for the specific unit configuration.

Installation & Requirements
Clearances and ventilation
The installation manual calls for 6" clearance at both sides and the back when the fryer is next to combustible construction; it states that no clearance is required next to noncombustible construction. Provide 24" at the front. Do not block the area around the base or beneath the fryer. Keep the areas around the front, sides and rear clear for combustion air, and install the fryer so combustion products are removed efficiently. Kitchen ventilation must not create drafts that interfere with burner operation. Do not place the flue close to an exhaust-fan intake or extend it as a chimney; the manual warns that an extended flue can change combustion, lengthen recovery and cause delayed ignition.
Gas and electrical connections
The specification sheet lists a 1" NPT connection for two-to-four-frypot batteries. The installation notes call for a minimum 1-1/2" kitchen main gas supply line and state that the incoming supply line should be at least 1-1/2" in diameter. The manual gives recommended minimum store manifold pressures of 6" W.C. for natural gas and 11" W.C. for LP gas; specified burner manifold pressures are 3.0" W.C. for natural gas and 8.25" W.C. for propane. Have the gas supply and burner manifold pressure checked as described in the manual.
Domestic units are supplied with a 5 ft. grounded cord; export units are supplied with an 8 ft. 10" grounded cord set. The published power table includes several voltage and option combinations, so verify the electrical configuration on the unit’s rating plate and the selected equipment configuration. The manual states that the appliance must be configured for its specified gas type. Gas conversion requires the appropriate conversion components and must be performed by qualified, licensed and authorized personnel. Check gas connections for leaks with a soapy-water solution; never use a flame to check for leaks. If gas is smelled, shut off the supply and contact the local gas company or an authorized service agency.
Operation
Use the FQ4000 easyTouch controller to manage cooking and filtering. Its recipe library supports recipes with product images, USB loading, product display options and day-part menus. COOL Mode lowers the temperature when the fryer is idle. Automatic top-off replenishes oil from the JIB inside the cabinet.
The automatic filtration system is operated from the front of the fryer. The fryer can provide filter reminders based on a global or individual product count, and the controller can show the percentage of cooks remaining before a filter prompt. During filtration, the frypot is air-cooled to reduce the heat load on the oil. Only one frypot filters at a time, with the other frypots held in queue. The manual warns never to dry-fire the unit: cooking oil or water must be in the frypot before firing.
Cleaning & Maintenance
Daily care
The manual calls for at least two quick filters daily and one AM long-filter cycle each day. Regularly skim debris from the oil. During the long-filter cycle, remove the rack and clean the vat, oil-in-bilt (OIB) sensor and probes with a green no-scratch pad or approved fryer-cleaning tools. Take care not to damage probes and remove debris from the probe cavity.
Clean the built-in filter pan daily with hot water and a multi-purpose detergent, then rinse and dry its detachable parts and accessories. Do not operate the filter system without oil in the system, transport old oil in the filter pan or drain water into the pan; the manual warns that water can damage the filter pump. Do not use steel wool or abrasive pads on the pan and accessories. During daily cleaning, check that the filter-pan screen is on the bottom with filter paper on top, that the two O-rings on the pan fitting are present and in good condition, and that the pre-filter is clean and tightened.
Clean debris around the AIF and ATO sensors during the daily long-filter process, using a brush that can reach around the probe without damaging it. The manual also calls for daily cleaning of the oil-level sensor: drain the oil using the filter menu, remove black carbon with a green no-scratch pad or brush, then return the oil using the fill-vat-from-pan option. Inspect the fryer and accessories for loose or frayed wires and cords, leaks, foreign material and other signs that the equipment may not be ready for safe operation. Wipe accessible cabinet surfaces to remove oil and dust.
Periodic care
Clean the pre-filter every 30 days, or more often if oil flow slows. With protective gloves on, remove its cap with the supplied wrench, brush debris from the attached screen, rinse and dry it, then reinstall and tighten the cap. The manual notes that a loose cap can admit air and slow the oil return.
For the monthly controller set-point check, the manual directs the operator to place a good-grade thermometer or pyrometer probe in the oil with its end touching the fryer temperature-sensing probe, then compare the readings when the controller’s product temperature is stable. For cleaning behind the fryer, the manual instructs operators to shut off and disconnect the gas at the manual shutoff and quick disconnect, then reverse the steps before returning the fryer to operation. Disconnect all electrical power cords before movement, testing, maintenance or repair. Never drain boil-out or cleaning solution into a shortening disposal unit or filtration unit.
Troubleshooting
Fryer is not heating
The service manual first points technicians to confirm that the fryer is receiving gas and electrical power, that the gas supply is open and that the electrical breaker has not tripped. If those supplies are present, the manual identifies the 24 VAC circuit as a likely area to investigate, including the oil-level sensor, ignitor sensing wire, ignition module, ignition wire and ignitor. If the 24 VAC circuit is not the cause, the gas valve or gas supply may be involved. Gas pressure and burner manifold pressure should be checked using the manual’s procedures. These electrical and gas diagnostics are service work; the manual restricts installation, adjustment, maintenance and service to qualified personnel.
Filtration is slow or will not run
If filtration is pumping slowly or not at all, check that the filter-pan screen is correctly placed with paper above it, that the pan fitting’s O-rings are present and in good condition, and that the pre-filter is clean and tight. The manual lists low oil level and low oil temperature among possible reasons filtration will not start. A clogged filter paper or pad, filter-pump problem, worn or missing O-rings, cold oil, or a drain or return valve/actuator problem can also interrupt filtration or oil return. Follow the controller prompts and the manual’s troubleshooting flowcharts rather than bypassing a fault.
If the controller displays INSERT PAN, the manual advises fully reinserting the filter pan and checking that its magnet is present; if the message remains with the magnet against the switch, the pan switch may be defective. For a specific MIB reset condition, the manual says to allow up to one minute for the board to reset. If the message remains, confirm the filter pan is empty and remove and restore all fryer power. This is a model-specific troubleshooting instruction, not a general reset procedure. For a persistent service-required error or gas, electrical or ignition fault, contact a qualified service technician.
Applications
With three independent 30 lb. frypots and automatic filtration, the 3FQG30U suits commercial kitchens that need multiple frypots available for menu items or cooking periods. The controller’s recipe and day-part functions can support organized menus, while automatic top-off and front-operated filtration support routine oil management in busy food-service operations.
