About the Hobart 2912B
Overview
The Hobart 2912B is a six-speed automatic roast beef slicer for commercial food preparation. Its variable-speed automatic carriage has front-mounted controls, a home-position start and a home-position return. A positive-angle carriage supports slicing without manual feed, and the stainless steel carriage has 12 1/2 inches of manual travel. Operators can also use the ergonomic carriage handle for manual operation.
The slicer combines a CleanCut knife with a top-mounted Borazon stone sharpener. Its gauge plate adjusts for slices up to 1 inch thick. The slicer includes features intended to support operator protection, cleaning and sanitation, including a permanently mounted ring guard, interlocks and a tilting, removable carriage system.
Key Features
- Automatic six-speed carriage: Variable carriage speed is controlled from front-mounted controls.
- Home-position functions: Home-start places the carriage in a convenient position before starting. When the Start/Pause switch is pulled, the carriage automatically returns to the home position and stops; pulling the switch reactivates automatic mode.
- Close-to-stop: Closing the gauge plate turns off the slicer and helps protect the knife edge.
- Interlocks: The gauge plate must be closed to tilt or remove the carriage. The gauge plate cannot be opened when the carriage is tilted back or removed. The carriage will not tilt away or be removed unless the gauge plate is closed.
- No-volt release: Following a power loss or unplugging, the slicer must be restarted before operation can continue, helping prevent unintentional starting.
- Tilting, removable carriage: The carriage tilts back for midday cleaning and is removable for thorough cleaning and sanitation. Its positive angle allows slicing without manual feed.
- CleanCut knife: The thin-edge design is intended to improve yield; the super-alloy edge is specified to last longer.
- Top-mounted Borazon sharpener: A single-action operation sharpens and hones in five seconds. The sharpener is removable for cleaning and submersion, and its Borazon stones have a lifetime guarantee.
- Microban antimicrobial product protection: The product protection is built in and intended to inhibit growth of bacteria, mold, mildew and fungi between cleanings. Microban does not protect users against food-borne bacteria; good hygiene practices remain necessary.
- Construction and cleaning features: The slicer has a one-piece anodized aluminum base, stainless steel carriage, a heavy-gauge stainless steel knife cover, a removable rear deflector, a lift lever and a permanently mounted ring guard.

Available accessories listed for the 2912B include a low fence, food chute, slaw tray and heavy front meat grip. The food chute, slaw tray and low carriage fence are identified as available accessories in the 2912B manual; the slicer specification sheet also lists a low fence, food chute and product tray.
Installation & Requirements
Before installation, check the slicer for shipping damage and test the electrical service against the specifications on the machine data plate, located on the right side of the base. The 2912B is supplied with a three-prong grounding plug. The outlet must be properly grounded; if it is not the proper grounding type, the manual directs users to contact an electrician. The sharpener, top knife cover and deflector should be mounted in place, and the selected fence can be clamped to the carriage tray to limit product movement.
Thoroughly clean and sanitize the slicer after installation and before use. The manual excerpt does not provide installation clearances or ventilation requirements.
Operation
Keep the slicer’s safety devices in their correct operating positions during use. The home-start feature requires the carriage to be in its home position before starting. For automatic slicing, use the front-mounted controls to select a carriage speed and start the carriage with the Start/Pause control. The home-position return brings the carriage to a stop when the Start/Pause switch is pulled; pulling it again reactivates automatic mode. The slicer also supports manual operation using its ergonomic carriage handle.
Set the gauge plate for the desired slice thickness, up to its stated maximum of 1 inch. The double-action indexing cam provides precise control for shaving, chipping and thin slicing on its first full revolution; its second revolution opens the gauge plate quickly for thicker slices. The gauge plate holds its position for consistent slicing. Closing the gauge plate turns the slicer off. The front meat grip is specified for use with heat lamps and swings out of the way when not in use.
If power is interrupted or the slicer is unplugged, restart it before continuing. The carriage interlock prevents tilting or removal unless the gauge plate is closed, and the gauge plate interlock prevents opening it while the carriage is tilted back or removed.
Cleaning & Maintenance
The knife is very sharp. Exercise extreme caution near it. Before cleaning, disconnect electrical power and follow lockout/tagout procedures. Use a clean cloth with mild detergent and warm water on machine surfaces, then rinse with a fresh cloth and clean water. Use products formulated for stainless steel and aluminum. Do not use steel pads. Do not exceed detergent or sanitizer manufacturers’ recommended concentrations; the manual specifies a maximum available chlorine concentration of 200 parts per million and says to rinse with clean water.
To clean the carriage tray, close the gauge plate and pull the carriage fully toward the operator. Unscrew the carriage tray support-arm knob and tilt the tray to the right until it is almost horizontal. Clean it in that position or remove the support arm by lifting it straight up; the removed support arm can be cleaned in a sink. The support arm must stay with its own slicer: the last three digits of the slicer serial number are etched on its key. When reinstalling it, align the key with the carriage pivot slot, return the tray toward the gauge plate and tighten the knob.
Remove the top knife cover by turning its latch knob counterclockwise and lifting it free of the guide pins. Remove the deflector from its mount below the knife; the manual describes rotating it outward, away from the knife. Clean the cover and deflector with warm soapy water in a sink and rinse them. Remove the sharpener using its lock lever, lift it clear of its guide pins, wipe residue from its housing and clean it in a sink. The specification sheet states that the sharpener is removable and submersible for cleaning.
To clean around the ring guard, work a moistened, folded paper towel between the guard and knife, starting at the base. Manually rotating the knife lets the towel follow the knife and wipe the ring guard and gauge plate edge. Wipe both knife sides outward from the centre using mild detergent or sanitizer solution. Reassemble the sharpener securely on its guide pins and lock it in place, replace and secure the top knife cover, and reinstall the deflector and carriage support arm. Use the lift lever to raise the slicer for cleaning underneath, then slowly retract the lever to return the slicer to its normal position.
For sharpening, the manual says to sharpen only when necessary, such as when slice quality begins to degrade; sharpening too often causes unnecessary knife wear. Disconnect power before preparing the slicer, close the gauge plate, remove the top knife cover and clean the exposed knife surfaces and edge. The manual’s sharpening procedure then calls for the carriage to be fully toward the operator, the slicer to be started, and the sharpener handle to be pulled fully forward for five seconds before being released. Turn the slicer off, unplug it and wipe away grinding particles. The manual warns that fat from meat or cheese should not transfer from the knife to the sharpener.
For lubrication, use only the supplied Lubriplate FMO-200-AW food-safe lubricant. Apply five drops in the carriage transport wick hole or directly on the carriage slide rod; the manual specifies monthly application depending on usage.
Applications
The 2912B is specified as an automatic roast beef slicer. Its stated capacity and adjustable gauge plate also support slicing products that fit the carriage, with the double-action indexing cam providing settings for shaving, chipping and thin slices as well as thicker cuts. The manual identifies the front meat grip for use with heat lamps.
