About the Hobart EDGE13-11
Overview
The Hobart EDGE13-11 is a manual, medium-duty meat and cheese slicer with a 13-inch chrome-plated carbon-steel knife. The 45° product table uses gravity feed to guide food toward the knife with less need for operator pressure. An infinite slice-adjustment knob produces cuts from paper-thin to 9/16 inch (14 mm), for hard or soft foods.
The knife runs at 300 rpm through a Poly-V belt drive. Hobart describes the belt system as quieter than traditional drive systems and as supporting belt life, serviceability, and slicing performance. The one-piece anodized-aluminum base has smooth surfaces without food-catching crevices or bolt holes. The carriage, sharpener, meat grip, and product deflector can be removed for cleaning.
Key Features
- 13-inch knife: Chrome-plated, forged carbon steel; hollow-ground, hardened, polished, and built for slicing dense products.
- Adjustable slices: Infinite adjustment from paper-thin to 9/16 inch (14 mm).
- Angled gravity feed: The 45° product table guides product toward the knife and requires less mechanical pressure.
- Poly-V belt drive: A 1/2 HP, single-speed knife motor drives the knife at 300 rpm. The belt system is specified as quieter and easier to service than traditional transmission systems.
- Removable parts: The carriage system, product deflector, meat grip, knife cover, and top-mounted sharpener can be removed to aid cleaning and sanitation.
- Built-in sharpener: The removable, top-mounted ceramic sharpener uses a two-stone, dual-action system to sharpen and hone the knife in a single action.
- Operator protection: A permanent knife ring guard, gauge-plate interlock, carriage-system interlock, and no-volt release are included.
- Simple controls: Start/Stop button and an index knob for slice-thickness adjustment.

Installation & Requirements
Before installation, check that the electrical service matches the slicer’s data plate, located on the right side of the base. The EDGE13-11 has a three-prong grounding plug and must be connected to a properly grounded outlet. If the receptacle is not the proper grounding type, the manual instructs the user to contact an electrician. Electrical information in the manual lists 120 V, 60 Hz, single phase, 4.0 machine amps, and a 15 A minimum circuit ampacity; the specification sheet identifies a 15 A service current requirement when connected by plug.
To secure the product tray, turn the knob below it clockwise until snug. Lower the sharpener onto its post to mount it; it can be removed for cleaning. The slice deflector should be mounted below the knife. The manual says to clean, rinse, and sanitize the slicer thoroughly after installation and before first use.
On receipt, inspect the slicer for shipping damage. If damage is found, the manual says to notify the carrier within five business days, contact the carrier’s local terminal immediately when the damage is discovered, record the time, date, and person spoken to, and follow up in writing or electronically. Retain the original packing materials, and do not move, install, or modify a damaged slicer. The manual also gives Hobart customer care at (800) 333-7447 for this damage-reporting process.
Operation
Before slicing, close the gauge plate fully and pull the product tray forward until it stops. Place the product on the tray with the meat grip out of the way, then set the grip against the product. If the meat grip is not needed, lift it to the top of its rod and rotate it 270° behind the product tray, where it rests in the small notch in the upper tray slot.
Press the ON switch to start the slicer. Turn the index knob to set the gauge plate and desired slice thickness, from paper-thin to 9/16 inch. Move the carriage back and forth using the carriage handle to slice. The product carriage capacity is up to 9.5 inches wide by 7 inches high, or 8.5 inches in diameter.
The manual states that the slicer must have its safety devices in their correct operating positions whenever it is in use. The no-volt release prevents the machine from resuming operation after power is interrupted; restart it before continuing. The gauge-plate and carriage interlocks prevent operation unless components are safely positioned. The permanent ring guard protects the knife during operation and cleaning, and the removable product deflector helps shield the knife while the carriage is moving.
Cleaning & Maintenance
Clean, rinse, and sanitize the slicer after each day’s use or after it has been idle for an extended time. Follow applicable national, state, and local health-code intervals. Before cleaning, unplug the power cord and turn the index knob fully clockwise to close the gauge plate. The knife is very sharp; the manual calls for extreme caution near it. Always unplug the slicer before cleaning or moving it, and unplug it before servicing or removing parts. Replace parts before operating the machine again.
Remove the product tray, meat grip, meat-grip rod, slice deflector, knife cover, knife-cover knob, and sharpening stone. Wash machine surfaces, food-contact areas, hand-contact areas, handles, knobs, and the control panel with warm soapy water, a towel, and mild detergent. Wash removable parts with water, a towel, and mild detergent; rinse with clean water, sanitize, and allow them to air dry. The manual specifies that sanitizer concentrations must follow the applicable instructions and must not exceed the chemical manufacturer’s recommendations. It also says not to exceed 200 parts per million of available chlorine; higher concentrations accelerate metal corrosion. Rinse with clean water after sanitizing.
- Do not wash slicer components in a dishwasher.
- Do not hose down the slicer or splash it excessively with water.
- Use only products formulated to be safe on stainless steel or aluminum.
- Do not use a steel pad on slicer parts.
- Excessive sanitizer or products not formulated for aluminum may void the Hobart warranty.
The top-mounted, removable ceramic sharpener has a two-stone, dual-action system; the specification sheet says its single action sharpens and hones in 15 seconds. The sharpener is removable and submersible for cleaning. The manual also includes knife-sharpening and lubrication sections, but the provided excerpt does not include those procedures.
Inspect the gaskets on components detached for cleaning and sanitizing at intervals not exceeding six months. The manual says these inspections must be performed by the manufacturer or its authorized service agent. If a gasket or seal is damaged or missing, remove the slicer from service until it is repaired by the manufacturer or its authorized service agent. Failure to follow use, care, and maintenance instructions may void the Hobart warranty.
Troubleshooting
If power is interrupted, the no-volt release requires the slicer to be restarted before operation can continue. The manual also states that safety devices must be in their correct operating positions whenever the slicer is in use. The gauge-plate interlock requires the gauge plate to be closed to remove the carriage, and the carriage-system interlock prevents carriage removal when the gauge plate indicator is not closed. The available manual excerpt lists a troubleshooting section but does not provide its symptom-by-symptom remedies.
Applications
The EDGE13-11 is specified for manual slicing of meat and cheese, including dense products and hard or soft foods. Its adjustable slice thickness suits uses such as portioning deli meats and cheeses for sandwiches, platters, and food preparation.
