About the Hobart HR 5
Overview
The Hobart HR 5 is a commercial rotisserie oven. Hobart’s replacement-parts catalog lists the HR 5 in electronic and programmable versions: electronic models ML-126454 and ML-126727, and programmable models ML-126456 and ML-126728. The manual supplement covers the optional 15-program control for the HR 5 and HR 7 rotisserie ovens. The operating details below apply to that programmable control; they should not be assumed to describe every electronic-control version.
The control can organize cooking into Cook, Grill and Warm/Hold functions. The manual identifies Cook as the roasting cycle and Grill as a cycle for searing and browning, which can be placed at the beginning or end of a cycle. Warm/Hold is for holding food after processing.
Key Features
- Optional 15-program control: Five menu buttons provide access to 15 programs, arranged in three groups of five.
- Three processing functions: Cook, Grill and Warm/Hold can be programmed for each menu program.
- Cook and Grill settings: Each function accepts a programmed temperature and time within the control’s stated limits.
- Warm/Hold setting: This function accepts a temperature but does not use a programmed duration. The rotisserie continues turning during the hold cycle.
- Cycle monitoring: The control displays the processing time and oven cavity temperature; it can also display probe temperature during a cycle.
- Manual or programmable operation: The supplement explains that setting all three dials to P selects programmable control. If they are not all set to P, manual controls override the programmable controls.

Operation
Selecting manual or programmable control
For programmable operation, set the Thermostat, Rotisserie and Main Power dials to P. When all three dials are in that position, the display shows “15Pr” to indicate the extended programming option and “Program 1” on the other display. If the dials are not all set to P, manual controls take precedence. The supplement directs operators using manual controls to use the control dials.
Using the program groups
Each of the five menu buttons can access three programs. Press a menu button once to access Programs 1–5, twice for Programs 6–10, or three times for Programs 11–15. The selected button’s LED lights. When a processing cycle is started, the time display shows the total processing time and counts down. During preheat, the temperature display reads “pht” until the cavity reaches 125°F (52°C); it then shows the actual cavity temperature while the oven maintains the programmed temperature.
Programming a menu button
Before entering programming mode, select the menu button and program group you intend to set. The manual instructs the operator to enter program mode by pressing and holding two controls together until “PROG” appears. The Cook function is programmed first, with a temperature and time. If needed, set a Grill temperature and time as well, then set the Warm/Hold temperature. The manual states that every function must have a value entered for the program to work properly. Warm/Hold does not accept a time; attempting to enter one causes the buzzer to sound for three seconds. Confirm the settings by pressing the flashing menu button. The display then shows the program number and “15 Pr.”
To check saved values, select the relevant menu button and function. Cook and Grill display their programmed temperature and time; Warm/Hold displays its temperature, and the time display shows “00:00.”
Running and monitoring a cycle
Select the desired menu button and program group, then start the cycle. During processing, the control shows the remaining time and oven cavity temperature. The manual also describes checking the probe temperature during a cycle; when selected, the probe icon lights and the probe temperature appears for 20 seconds. Operators can call up the programmed Cook or Grill temperature and time, or the Warm/Hold temperature, while processing.
To pause and check food before the cycle ends, use the cycle control identified in the manual. The heaters and front lamp on the customer side turn off, and the control flashes. Starting the cycle again resumes from where it stopped; the separate restart action begins the programmed cycle again from the beginning. At the end of a Cook or Grill cycle, a buzzer sounds. When Warm/Hold begins, the buzzer sounds and the operator-side lamp cycles on and off with the heaters. The temperature and time displays show actual cavity temperature and time of day until the holding temperature is reached. The manual says to end the holding process using the hold-cycle control.
Changing settings for a cycle
Temperature or time for a Cook or Grill function can be adjusted before processing begins or while the cycle is running. The manual notes that changing a setting this way does not alter the value stored in program memory for that menu button.
Applications
The HR 5’s documented functions suit foodservice operations that need to roast food in a rotisserie oven, apply a searing or browning stage, or hold food after cooking. With the optional programmable control, operators can set up different Cook, Grill and Warm/Hold values across the available menu programs. The source material does not provide a food capacity, oven dimensions, electrical connection requirements or cleaning instructions for the HR 5, so those details are not specified here.
