About the Hobart HUV3P
Overview
The Hobart HUV3P is a three-pan deli display case in the HUV Series. The manual lists two HUV3P configurations: full-service, model ML-132065, and self-service, model ML-132066. The full-service version uses an adjustable frame and pans; the self-service version holds packaged food on the case’s bottom plate. The manual also covers a related HUV3P/2 model, but its specifications and configuration are not treated here as HUV3P details.
For the HUV3P full-service model, operators can set the upper heaters, well temperature and humidity tray heater. In self-service operation, the case is preheated and food is loaded onto the bottom plate. The manual also gives instructions for glass-panel assembly, water and drain connections, day-end shutdown, cleaning and troubleshooting.
Key Features
- Three-pan format: The manual identifies the HUV3P as a three-pan case.
- Two service configurations: Full-service and self-service versions are listed under the HUV3P model name.
- Adjustable full-service heat: The upper heater settings range from 0, off, to 5, maximum upper heat and minimum humidity in the selected zone.
- Humidity tray: The tray automatically fills on power-up and as needed during operation, provided the water supply and sensing system are functioning.
- Self-service heated bottom plate: Packaged food is loaded directly onto the plate; the manual cautions against double-stacking products because contact with the plate is needed to maintain product temperature.
- Optional accessories: The manual lists a painted base assembly, cutting board assembly and food temperature probe with holder as optional items.

Installation & Requirements
Placement and codes
The location must allow adequate clearance for servicing and proper operation; the manual does not give a numerical clearance. In Canada, installation must follow local codes and the Canadian Electric Code, CSA C22.1, latest edition. The manual also gives U.S. requirements, which are not Canadian installation requirements: state and local codes and the National Electric Code, ANSI/NFPA 70, latest edition. Electrical and grounding connections must comply with applicable electrical codes. Before installation, check that the electrical service agrees with the machine data plate on the operator side of the case.
Glass, frame and accessories
Handle the tempered safety-glass side and center panels carefully. The manual warns that scraping their edges against stainless steel, concrete or other hard surfaces can cause breakage. On full-service cases, install the black glass seal strips: they help maintain heat and humidity in the full-service portion. The strips are not required on self-service cases. Install sliding glass doors in their tracks. For the full-service section, set the back and side wall supports to the same 0, 5 or 10 degree position, then install the divider bars and pans. If supplied as optional accessories, assemble the base and cutting board using the instructions provided with those assemblies. The optional food probe holder mounts to the right-hand frame on the operator’s side; plug the probe into its socket and twist it until locked.
Water and drain
Connect the water supply to the 1/2-inch barbed connection or remove the adapter to use the 3/4-inch NSHT inlet. Provide a manual shutoff valve near the case; it should be open while the case is operating. Water pressure should be 20 to 60 psi, and the manual requires a pressure-reducing valve above 60 psi. The manual advises consulting a local water-treatment specialist and having the supply analyzed. It warns that scale can build up on the water-level sensor probes and humidity tray. Do not use distilled, fully de-mineralized or de-ionized water: the water-level sensors rely on ions to detect the level, and this water may cause a false reading and tray overflow.
For the overflow drain, connect 1/2-inch inside-diameter plastic tubing to the 1/2-inch outside-diameter outlet with a 1/2-inch hose clamp. Run the line to an open-gap drain no more than 5 to 10 feet away, support the tubing along its length and do not combine the case drain line with another device’s drain. Do not connect solidly to a drain, to avoid back pressure.
Before first use
Before first use, clean, sanitize, rinse and dry the case, parts and accessories, then fill the humidity tray. The manual calls for operating the case at maximum temperature settings for 30 minutes to burn in the new heated surfaces; smoke and an unpleasant odor may result. Its warning says to disconnect electrical power and follow lockout/tagout procedures for the stated preparation steps.
Operation
Starting and humidity filling
Turn on the main power switch, light switch and heater switch. The controller beeps and displays numbers while powering up. The humidity tray fills automatically at startup, and its red empty indicator should turn off. During the day, the indicator may cycle on and off as the case automatically adds water. Keep the humidity tray closed during operation. At a setting of 3, the manual says the tray evaporates approximately 3 quarts of water per hour.
Full-service settings
To adjust an upper heater, select that heater and use the up or down arrow to choose a setting. Setting 5 provides maximum upper heat and minimum humidity in the selected zone; setting 1 provides minimum upper heat and maximum humidity; setting 0 turns upper heat off. Repeat the process for the other upper heaters. The manual notes that the number of upper heaters depends on the HUV model, so it does not assign a different heater count to the HUV3P here. To set the full-service well temperature, select the well temperature control and use the arrows to choose a set point from 140°F to 185°F. The display shows the set point, then shows the actual well temperature after 10 seconds. Use the humidity tray control and arrows to set its heater level.
Self-service use
Allow the self-service case to preheat for 30 to 60 minutes. Keep all doors closed for proper preheating and verify the case temperature on the display. The heater output indicator cycles on and off during normal operation. To load food, open a sliding glass door and place packaged food on the bottom plate. Do not double-stack products: contact with the plate is necessary to maintain product temperature. Close the sliding door after loading and keep the doors closed when the case is not being loaded. At the end of the day, turn off the heat switch, light switch and main power switch.
Cleaning & Maintenance
The case and its parts may be hot during operation and cleaning. Disconnect electrical power before cleaning. Do not use oven cleaners or a high-pressure hose. Clean the food probe after every use: remove it from its holder, wipe it with antibacterial soap or cleaner, rinse and dry it, then return it to the holder.
For end-of-day interior cleaning, raise the customer-side front glass; the manual says it stays up on its own. Remove the pans and, if necessary, the back wall support, side wall supports and divider bars. Wash those parts with warm soapy water, rinse, sanitize and dry with a soft clean cloth; the manual also says full-service pans and parts may be washed in a commercial dishwasher. Clean interior stainless-steel surfaces with warm soapy water, rinse and wipe dry with a soft cloth.
For glass cleaning, remove the clear glass protector strips from the sliding doors and, on self-service models, the top and bottom self-service front glass. Remove the black rubber seal strips from the side and center glass panels. Wash door handles with warm soapy water, rinse and dry. Clean glass with warm soapy water or commercial glass cleaner, then rinse and dry. Do not use scouring pads or abrasives on glass because they can damage its reflective coating. Refit the clear protector strips: they help protect the sliding doors and, on self-service models, the top and bottom front glass. Refit the black seal strips with their lips facing inward toward the case or full-service section; the strips help retain heat and humidity in the full-service area.
Clean the control panel with a sponge or clean soft cloth; excessive water and harsh cleaners can damage it. Clean the exterior with warm soapy water and a soft cloth or sponge, rinse thoroughly and wipe dry. Reinstall the pans, supports and divider bars as applicable, then lower the front glass. For stainless steel, the manual identifies abrasion, deposits and water, and chlorides as factors that can break down the surface and allow corrosion. Avoid steel pads, wire brushes and scrapers that can leave iron deposits. Use plastic scouring pads or soft cloths; for stubborn stains, the manual names Cameo, Talc or Zud First Impression. Rub parallel to the polish lines or with the grain.
Troubleshooting
- No humidity and red empty light on: Confirm the external water valve is on, then switch main power off and on. If the water-level probe is stuck, pivot it to its vertical position and restart the main power. If the probes have lime coating, delime them and restart. Check that the water meets the manual’s specifications and that incoming pressure is sufficient. If the problem remains, the manual says to call Hobart Service.
- No humidity and red light off, with the humidity tray full: Check whether humidity is set to 0; set it to 1, 2 or 3 if humidity is required. If the issue remains, call Hobart Service.
- Humidity tray continuously overflows or water leaks from the case: Turn off the external water valve and call Hobart Service.
- Lights are off while the controller functions: Check that the light switch is on. If the lights remain off, call Hobart Service.
- Food probe displays “---”: Make sure the probe is fully plugged in and twisted into its locked position. If it still does not work, call Hobart Service.
- Well temperature is not reached within one hour: Check whether the door or doors are open, pans are in place and black glass seal strips are fitted on the side glass. If the temperature is still not reached, call Hobart Service.
Applications
The HUV3P supports deli and food-service display in either full-service or self-service operation. The manual’s self-service instructions specifically describe loading packaged food onto the heated bottom plate. The full-service instructions cover arranging pans in the adjustable frame and setting the well, upper heaters and humidity tray.
