About the Hobart HUV5P
Overview
The Hobart HUV5P is a five-pan deli display case in Hobart’s HUV Series. The manual identifies two HUV5P configurations: full-service model ML-132069 and self-service model ML-132070. The full-service case has a customer-side front glass panel that raises for access, an adjustable frame for pans and controls for the upper heaters, heated well and humidity tray. The self-service case has a heated bottom plate for packaged food and sliding glass doors that should remain closed when the case is not being loaded.
The HUV5P shares its installation and operation manual with other HUV Series models. Instructions for features that apply only to full-service or self-service cases are identified below; use the instructions that match the HUV5P configuration in your operation.
Key Features
- Five-pan format: The manual lists the HUV5P as a five-pan model. Adjustable frame supports and divider bars are installed for the full-service case.
- Full-service holding: Full-service operation includes a heated well, adjustable upper heaters and a humidity tray. Upper heater settings allow the operator to adjust heat by zone.
- Self-service holding: Self-service operation uses a heated bottom plate. Packaged food is loaded onto the plate, with product contact with the plate required to maintain proper product temperature.
- Automatic water filling: During operation, the humidity tray fills automatically as needed. A red indicator signals when the tray is empty.
- Lighting and controls: The manual describes separate main power, light and heater switches, along with a controller for temperature and heat settings.
- Optional accessories: A food temperature probe and holder, cutting board assembly and painted base are listed as optional. The probe connects to a socket and twists to lock into place.

- Water supply pressure: 20 to 60 psi. The manual calls for a pressure-reducing valve if pressure exceeds 60 psi.
- Water supply quality: Hardness of 2 to 4 grains per gallon; chlorides less than 30 ppm; total dissolved solids in a 60 ppm range; pH 7 to 8.
- Water inlet options: 1/2-inch barbed tubing connection, or 3/4-inch NSHT inlet after removing the adapter.
- Drain connection: 1/2-inch O.D. outlet; the manual specifies 1/2-inch I.D. plastic tubing for the overflow drain line.
- Electrical information: The manual directs the installer to check the machine data plate, located on the operator side, and confirm that the electrical service matches it. The supplied text does not provide a reliably readable HUV5P voltage or amperage rating.
Installation & Requirements
Before installation, check the electrical service against the data plate on the operator side of the case. Electrical and grounding connections must comply with applicable electrical and local codes. For installation in Canada, the manual names local codes and the Canadian Electric Code, CSA C22.1, latest edition.
For the water supply, connect the supply line to the 1/2-inch barbed connection, or remove the adapter and connect to the 3/4-inch NSHT inlet. The manual calls for a manual shutoff valve convenient to the display case and states that the valve should be open while the case is operating. Maintain water pressure within the specified 20 to 60 psi range. Water quality should be checked before installation; the manual advises consulting a local water treatment specialist if needed. Do not use distilled, fully de-mineralized or de-ionized water: the level sensors rely on ions in the water, and this water can cause a false reading and humidity tray overflow.
Connect the overflow drain with 1/2-inch I.D. plastic tubing and a 1/2-inch hose clamp. The outlet is on the underside of the case. Route the tubing to an open gap-type drain no more than 5 to 10 feet away and support it along its length. Do not connect the case solidly to a drain, combine its drain line with another device’s drain line or create back pressure.
During unpacking, inspect the case for shipping damage and retain packaging if damage is found; the manual says to contact the carrier within 15 days of delivery. Remove protective vinyl paper from stainless steel surfaces and tape from glass and steel surfaces. Handle the tempered safety-glass panels carefully: scraping an edge against stainless steel, concrete or another hard surface can break the glass. Full-service cases require the black glass seal strips to help maintain heat and humidity; the strips are not required on self-service cases.
For full-service assembly, adjust the back wall support and both side wall supports to the same 0, 5 or 10 degree position. Install the long, medium and short divider bars, then place the pans between them. The optional probe holder mounts to the right-hand frame on the operator’s side with two screws. Assemble optional cutting board and base assemblies according to their supplied instructions.
Before first use, clean, sanitize, rinse and dry the case, parts and accessories. Fill the humidity tray, then operate the case at maximum temperature settings for 30 minutes to burn in new surfaces. The manual notes that smoke and an unpleasant odour may occur during this process.
Operation
Starting the case and humidity fill
For the manual’s startup procedure, fill the humidity tray, turn on the main power switch, then turn on the light and heater switches. The controller beeps and displays scrolling numbers as it powers up. On power-up, the humidity tray fills automatically and its red empty indicator turns off. During the day, the indicator may cycle on and off as the case fills the tray as needed. Keep the humidity tray closed while the case is operating.
Full-service settings
To set upper heat, select an upper heater and use the up or down arrow to choose its setting. Repeat for each heater; the manual notes that the HUV Series models have 3, 4 or 5 upper heaters depending on model. The HUV5P is the five-pan model. Setting 5 provides maximum upper heat and minimum humidity in the selected zone; setting 0 turns that zone’s upper heat off.
To set the full-service well temperature, press the well temperature key and use the up or down arrow to select a set point from 140°F to 185°F. The display shows the set point while adjusting; after 10 seconds it displays the actual well temperature. The humidity tray heater is set through its humidity tray control. A setting of 0 turns humidity off; the troubleshooting section directs operators to set humidity to 1, 2 or 3 if the tray is full but humidity is off.
Self-service and shutdown
For self-service operation, allow the case to preheat for 30 to 60 minutes with all doors closed. Verify that the case reaches the proper temperature using the display. Load packaged food onto the bottom plate without stacking products on top of one another; contact with the plate is necessary to maintain proper product temperature. Close the sliding glass door after loading and keep the doors closed when the case is not being loaded.
At the end of the day, turn off the heat switch, the light switch and then the main power switch.
Cleaning & Maintenance
Safety: The case and its parts can be hot. Disconnect electrical power before cleaning. Do not use oven cleaners or a high-pressure hose.
Clean the food probe after every use. Remove it from its holder, wipe it with antibacterial soap or cleaner, rinse and dry it, then return it to the holder.
For end-of-day interior cleaning, raise the customer-side front glass; the manual says it stays up on its own. Remove the pans and, if necessary, the back wall support, side wall supports and divider bars. Wash these parts with warm soapy water, rinse, sanitize and dry with a soft clean cloth, or wash them in a commercial dishwasher for full-service cases. Clean the interior stainless steel with warm soapy water, rinse and wipe dry with a soft cloth.
Remove the clear glass protector strips from sliding doors on all models. On self-service models, also remove the protector strips from the top and bottom front glass. Remove the black rubber glass seal strips from the left, right and, where fitted, center side panels. Clean the door handles with warm soapy water, rinse and dry. Clean glass with warm soapy water and dry it, or use a commercial glass cleaner. Do not use scouring pads or abrasives on glass because they can damage its reflective coating.
Replace the clear protector strips after cleaning. The manual says these strips help protect sliding doors and, on self-service cases, the top and bottom front glass. Reinstall the black rubber seal strips with their lips facing the inside of the case or the full-service portion. These strips are necessary to hold heat and humidity in the full-service section. Reinstall the supports, divider bars and pans, then lower the front glass.
Clean the control panel with a sponge or clean, soft cloth; excessive water and harsh cleaners can damage it. Clean the case exterior with warm soapy water and a soft cloth or sponge, rinse thoroughly and wipe dry. For stainless steel, avoid steel pads, wire brushes and scrapers that can leave iron deposits. Use a plastic scouring pad or soft cloth instead, and rub with the grain or parallel to the polish lines. The manual also warns that hard-water deposits can contribute to corrosion.
Troubleshooting
- No humidity and red humidity-tray-empty light on: Confirm the external water valve is on, then switch main power off and on. Check that the water-level probe is in its vertical position. If probes are coated with lime, delime them and restart the main power. Confirm the water meets the manual’s quality specifications and that incoming pressure is not too low. If the issue remains, call Hobart Service.
- No humidity and red light off, with the humidity tray full: Check whether humidity is set to 0. Set it to 1, 2 or 3. If humidity still does not operate, call Hobart Service.
- Continuous humidity-tray overflow or water leaking from the case: Turn off the external water valve and call Hobart Service.
- Lights are off while the controller works: Check that the light switch is on. If the lights remain off, call Hobart Service.
- Food probe displays “---”: Check that the probe is fully plugged in and rotated into its locked position. If it still does not work, call Hobart Service.
- Well temperature is not reached within one hour: Check that the door or doors are closed, the pans are in place and the black glass seal strips are installed on the side glass. If the issue remains, call Hobart Service.
Applications
The HUV5P is suited to deli counters and other food-service areas that hold and present hot prepared foods. The full-service configuration supports staff access to the pans and adjustable heat and humidity settings. The self-service configuration is suited to packaged food presentation, with customers accessing products through sliding doors. Follow the operating instructions for the specific configuration and product being held.
